Ingredients
  

For the crust:
  • 1 cup graham cracker crumbs
  • ¼ cup sugar
  • 7 tablespoons melted butter

Method
 

  1. Preheat oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, sugar, and butter. Press into the bottom and up the sides of a greased 8 inch springform pan. Bake for 8 minutes, until golden.
  3. In a large mixing bowl, beat cream cheese until smooth. Add in sugar and vanilla and beat well. Add in eggs one at a time until just combined.
  4. Bake for 45 minutes, until lightly golden. Cool, cover and chill overnight.
