Pumpkin Cheesecake

This large-format, baked pumpkin cheesecake (serving 20) features a spiced gingersnap and melted butter crust inside a 13x9-inch baking dish. The rich filling is made from softened cream cheese, sugar, solid-pack pumpkin, cinnamon, vanilla extract, and lightly beaten eggs. Baked at 350°F for 40–45 minutes, it is cooled on a wire rack, chilled for at least 6 hours, and served with a dusting of ground nutmeg and a drizzle of maple syrup.

Ingredients
  

For the crust:
  • cups gingersnaps cookies crushed
  • ¼ cup butter melted
For the cheesecake filling:
  • 5 8-ounce packages cream cheese, softened
  • 1 cup sugar
  • 1 15-ounce can solid-pack pumpkin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 5 large eggs lightly beaten
  • Ground nutmeg for sprinkling
  • Maple syrup for drizzling

Method
 

  1. Preheat and Prep: Preheat the oven to 350 degrees F. Grease a 13x9-inch baking dish.
  2. Make the Crust: In a small bowl, add gingersnap crumbs and butter and mix until a crumbly mixture forms. In the bottom of the prepared baking dish, place the mixture and press to smooth the surface. Set aside.
  3. Make the Filling: In a large bowl, add the cream cheese and sugar and with an electric mixer, beat until smooth. Add the pumpkin, cinnamon, and vanilla extract and beat until well combined. Add eggs and beat on low speed until just combined.
  4. Assemble: Place the pumpkin mixture over the crust evenly and sprinkle with nutmeg.
  5. Bake: Bake for about 40–45 minutes.
  6. Cool and Chill: Remove the pan from the oven and place onto a wire rack to cool for about 45–60 minutes. Now, refrigerate for at least 6 hours before serving.
  7. Serve: Drizzle with maple syrup and serve.
